The red seal of approval

From an apprenticeship in Toronto, to training in London and Paris, to pastry prep here in the Peace - patissier Raquel Dos Santos has the red seal of approval. Quite literally. Dos Santos is red seal-trained and is considered a master in the field.

From an apprenticeship in Toronto, to training in London and Paris, to pastry prep here in the Peace - patissier Raquel Dos Santos has the red seal of approval.

Quite literally. Dos Santos is red seal-trained and is considered a master in the field.  The Red Seal is short for Red Seal Interprovincial Program, a universally recognized certification of apprenticeship in Canada first established in 1959. 

Dos Santos has already had the chance to work with one of her idols, Claire Clark, who is regarded as one of the finest pastry chefs in the world, meeting Clarke in Oxford. She has spent the last three years in Dawson Creek and is getting known around Mile Zero and area as the Macaron Girl. She trades in DC under Honey Bee Patisserie and works with the Encana Events Centre’s talented chef and meal prep team.

“To me it is about the gifts of pastry and presenting a more ‘high-tea’ side of pastry,” she says noting she loves to talk about her profession. 

Let’s see if we can do something about that in the new year with Dos Santos writing in the pages of the Mirror as a columnist.
